The Life After Death. By Juan, The Fisherman of Dreams.
The process of mezcal from a spiritual point of view.

AGAVE

It absorbs the energy of its natural surroundings during its different life stages. Due to its anatomical complexity, and its ability to store life with just a few gulps of rain per year, it has a privileged spiritual development to exude experience, and initiate those who taste it into a sublime journey. The plants vary depending of the type of maguey. The agave’s life cycle on earth is between 7 to 40 years, depending on the species, and the place they inhabit.

SHAVING

The maguey is castrated and sheared with a machete. On this stage the attempt is to keep its ribs as short as possible so that no bitterness occurs.

ROASTING

The time for the burial arrives, after a long life where the agave developed its own personality in the midst of a fight with its natural surroundings. The maguey is a being full of life and energy, which continue to evolve after leaving behind its rooted body, after sucking the soul from the earth. It is crucial that the plant receives a cremation by firewood and stone, natural siblings that seal bodies, consolidating their spirit…

CRUSHING

It is here where the agave’s spirit is liberated. With a “Tahona” or mallet, the nectar is extracted from its wisdom, slowly, and delicately. In this moment it meets the oxygen, and acquires a new life, readying to share itself with the mortals.

FERMENTING

The wise maguey extract finds a new home in tubs made of Montezuma cypress, stone or animal hide; here, it will share its sojourn with natural spring water. Live organisms like bacteria participate in the development of hydrocarbon chains, transforming sugars into ethanol, which strengthen the maguey’s spirit.

DISTILLING

The moment has come to purify the mezcal’s soul, which is poured into clay, stone or copper pots, and the contact with fire occurs. Here, vapors are generated, which are canalized towards a condenser that cools them, separating superior alcohols that give birth to the “Water of life.”
